Chef Philip Houses’ Mediterranean Pasta

From the Merry-Go-Round Restaurant at Highlands

Serves Approximately 6

Ingredients:

6 Roman style artichoke hearts with stems
3/4 cup feta cheese
12 oz Flat baby leaf spinach
2 tbsp Fresh oregano
24 oz dry Penne pasta
1 Fresh lemon (zested and 1/2 juiced)
1 cup Oven roasted red tomatoes
1/4 cup Cold pressed extra virgin olive oil
2/3 cup Ripe spanish olives

Directions:

1- Saute spinach, roasted tomatoes, olives and artichokes with olive oil, salt & pepper, lemon juice and oregano.
2- Cook pasta according to package instructions
3- Add pasta to vegetables and more salt and pepper if needed
4- Pate and garnish with feta cheese.
